There’s a lot to do and see Down Under, and unless you know your way around, planning a trip to Australia can cause some serious decision fatigue. That’s where we come in. This seven-day trip combines the best of the city and bush so that you don’t miss a thing.
The week kicks off in Sydney’s bustling Potts Point district at the newly opened Spicer’s Potts Point, a victorian style boutique hotel with private terraces and a scrumptious breakfast spread. You’ll spend the first two days exploring the flavors and sights of Sydney with local guides, from rock oysters on the waterfront to touring the inner workings of the Opera House and sailing the harbor.
Then, switch gears and head north to Queensland where epic hiking trails await. You’ll be on the Scenic Rim Trail traversing rainforests and eucalypt forests on foot to reach your home base for the next two nights—plush canvas glamping tents that adjoin Main Range National Park. Watch for endangered glossy black cockatoos and the occasional dingo, and get a glimpse of aboriginal culture first hand. On the third day, you’ll hike ten miles to the grand finale, Spicer’s Peak Lodge. Here you’ll have a nearly 360 degree view of the surrounding mountains as you toast your walkabout with champagne as wallabies hop by in the field below.

Days 1, 2
TASTING TOUR AND SAILING IN SYDNEY
SPICERS POTTS POINT
If you’re flying from the west coast, you’ll arrive in Sydney early in the morning with plenty of time left for adventuring on your very first day. Get checked into Spicers Potts Point, a newly opened boutique property that will have you wanting to redesign your own home. From here, you’ll have a chance to get to know Sydney with the help of a private guide who will help you explore the flavors of the city. Have tea at Sydney Opera House and take a tour of it’s inner workings, taste beer “on the rocks” at Lord Nelson, enjoy a glass of champagne with waterfront views at Manta, and top it all off with a two-course lunch and glass of local wine at Bistro Rex. The next day, experience the thrill of life on Sydney Harbour. You’ll climb aboard a yacht and spend the afternoon sailing with great company and food, and even better views.
SPEND THE DAY EXPLORING BRISBANE
On the third day, you’ll take a short flight to Brisbane, Australia’s third largest city located in the south-eastern corner of Queensland. Check in to your suite at the Balfour, another comfortable and thoughtfully designed boutique hotel that makes you feel right at home. The afternoon is yours for the taking. Explore the South Bank area, where urban living takes on a whole new meaning, or visit the Queensland Art Gallery and Gallery of Modern Art, where interactive exhibits make art fun for everyone. Or you might just wander down James Street from the Balfour, where shopping and great restaurants make for the perfect casual afternoon.
Days 4, 5
BEGIN YOUR THREE-DAY HIKE ON THE SCENIC RIM TRAIL
Get ready to leave the city behind on day four! You’ll be picked up early from Balfour to transfer to Great Range National Park, part of Australia’s Great Dividing Range. This is day one of your three day walkabout. Get to know your guides and hiking companions on the first ascent up Mount Mitchell, an extinct volcano that features sheer cliff faces and breathtaking views over the Scenic Rim and Fassifern Valley. Then, drop down into the landscape below where eucalyptus trees abound and wild koalas can be spotted. You’ll walk eight miles total to your lodging for the next two nights—Spicers Canopy. Here, canvas tents await with beyond-plush bedding as well as a main lodge perfect for kicking back with friends.
On the second day, take a leisurely hike along Millar Vale Creek, just a stone’s throw from the lodge. This is a great opportunity to really soak in the history of the area as well as it’s different ecological zones. Your guide will explain the distinct wildlife in each area, and if you’re lucky, you might get to see some of the wallabies, kangaroos, and even snakes that call this region home. That afternoon kick back in the plunge hot tub or gather with friends around the fire pit with a glass of literally whatever beverage strikes your fancy.
Days 6, 7
HIKE TO THE GRAND FINALE ATOP SPICER'S PEAK

The third day of your hike will be the most challenging. Embark on a 10-mile adventure through the valley floor and up another side of the aptly named Scenic Rim, moving from eucalypt forest to rainforest along the way. This hike takes place on private land, and as a result you will feel like one of the first explorers as you follow your guide along a path that barely shows the footsteps of any other visitor. Giant ferns, awe-inspiring 1,000-year-old hoop pines, and ancient grass trees line the trail. Be on the lookout for a python that calls this area home! You might also see endangered glossy black cockatoos, the occasional dingo, and sneaky koalas that love to hang about in the eucalypt trees. After a hearty climb you will arrive at Spicers Peak Lodge with a gallant reception of champagne and après-hike treats. That evening, dig in to a well earned five-course meal and wine pairing.
The following day, you might want to take a short hike to a lookout point that provides a beautiful way to see just how much ground you have covered over the last three days. But we wouldn’t blame you for visiting the pool or the spa, either! You’ll depart late morning to transfer back to Brisbane before the rest of your Australian adventure or your flight home.
